A bright nose of black cherry and strawberry is accented on the palate with notes of dried tea leaves, white pepper, and musk. This wine ages for 9 months, with time spent in both French oak puncheons as well as concrete.
Our single varietal, Cabernet Franc is harvested earlier than our Cabernet Franc used in the Meritage to achieve a wine that is “lighter” in style. To extract less tannin, only a short maceration is done after fermentation. Aging is done in French oak and concrete tanks. In order to get a wine that is more “fruit forward,” only 18% of new oak is used. The wine is aged in 500 liter barrels (called “puncheons”) to reduce the oak impact on the wine (regular “barrique” barrels are 225 liters)
