Used as protection from oxidation and unwanted fermentations, sulfur has been added to wine since the ancient Romans perfected the early art of wine making. As an experiment, our winemaker challenged himself to handle this small batch wine with such great care as to avoid the damage most unsulfured wine would otherwise suffer. The result is an astoundingly expressive and elegantly simple wine unlike any other. It was aged for nine months in one 1 year old and one 2 year old French oak barrel. 46 cases produced.
